My Favorite Recipes as a Registered Dietitian
One of the most common challenges my clients tell me they struggle with is feeling unsatisfied eating the same foods each day and craving more variety and satisfaction with their meal and snack choices.
Recipe ruts are common and can be challenging to break free from. We’ve all been there! If you’re feeling like you need more inspiration for nutritious and delicious meal and snack ideas, look no further! Meal Ideas:
- Marinated Tofu (The Best Tofu Ever!) - Nora Cooks paired with rice and veggies, or even topped on a salad as a protein source 
- Marinated Peanut Baked Tempeh | Minimalist Baker Recipes paired with a grain and vegetable of choice

Snacks and Sweet Bites:
- Anytime bars (so much better tasting and more satisfying than store bought granola bars!) 
- Granola Recipe (I’d suggest reducing the honey or maple syrup and oil by half to start)

Dips, Dressings, Marinades, and Dollops to Enhance The “Yum” of Meals and Snacks
- Basil pistachio pesto (*this is my personal favorite pesto recipe. I add about 1/4 cup of nutritional yeast and find it delicious! I’ve added as much as 1/2 cup of nutritional yeast and enjoy this, however, I do LOVE nutritional yeast so start with 1/4 cup if you want to try to add it.) 
- Lemon herb chicken marinade (*this is my personal favorite marinade for chicken! I use half the salt the recipe calls for and it tastes just fine. I also prefer not to marinade it in a plastic bag to reduce exposure to microplastics.)
